Happy Monday after the Super Bowl! This is the day more people call out of work than any other day of the year. We had zero plans to watch this year, especially since we had decided to cut our cable last week. We had been using YouTube TV for the last year to save money on our cable bill but realized we were watching more Netflix and Disney+ than cable. However, once Super Bowl Sunday came around, we decided to watch and realized we could get access through our Amazon Prime account. Where I am going with this is that we pushed our typical Friday pizza night to Saturday. And then last night, we kept seeing all of the Pizza Hut commercials during pregame coverage and couldn’t remember the last time we had it. So things escalated quickly and we ended up with a Pizza Hut delivery order of stuffed crust pizza right at kick off.
With tomorrow, February 9, being National Pizza Day, I thought I would dedicate this Meal Plan Monday post to pizza! We typically designate Friday to be our weekly pizza night. Some Fridays it’s a frozen Totino’s pizza (which takes us right back to our college days), sometimes it’s a homemade concoction and other times it’s a HelloFresh recipe.
Chicken Sausage & Roasted Garlic Flatbreads
1 Yellow Onion
1 Roma Tomato
1 Clove Garlic
1 tsp Italian Seasoning
9 oz Italian Chicken Sausage
2 Flatbreads
1 tsp Flour
4 tbsp Cream Cheese
1/2 c Mozzarella Cheese
1 tbsp Olive Oil
1 tbsp Butter
1/2 c Water
Salt & Pepper, to taste
Preheat oven to 450 degrees F.
Halve, peel and cut onion into 1/2 inch thick wedges. Cut tomato into 1/2 inch thick wedges. Peel garlic and place in the center of small piece of foil, drizzle with olive oil and season with salt and pepper. Cinch into a packet.
Toss onion and tomato on foil covered baking sheet with drizzle of olive oil, half of your Italian seasoning, salt and pepper. Arrange tomato wedges skin sides down. Place foil packet with garlic on same sheet. Roast until browned and tender, 12-15 minutes.
While veggies and garlic roast, heat a drizzle of olive oil in a large pan over medium-high heat. Add sausage and cook, breaking up meat into pieces until browned and cooked through, 4-6 minutes. Turn off heat, transfer to plate and wipe out pan.
Once veggies and garlic are done, transfer to plate. Carefully remove and discard foil. Wipe off any excess oil from sheet. Place flatbreads on same sheet and return to over until lightly toasted, 5-7 minutes.
While flatbreads toast, transfer roasted garlic to a cutting board. Roughly chop or mash with fork. Melt 1 tbsp butter in pan used for sausage over medium-high heat. Add flour and remaining Italian seasoning. Which constantly until lightly browned, 30 seconds. Reduce heat to medium low and whisk in cream cheese, garlic and 1/2 c water until combined. Simmer until just thickened, 1-2 minutes. Turn off heat. Season with salt and pepper.
Heat broiler to high. Evenly spread flatbreads with sauce, then top with sausage, tomato and as much onion as you like. Sprinkle with mozzarella. Broil flatbreads until cheese melts, 1-2 minutes. Slice flatbreads into pieces, divide between plates and serve.

Double Cheese & Pork Sausage Flatbreads
1 Yellow Onion
3 Italian Pork Sausages
2 Flatbreads
1 Long Green Pepper
1 1/2 oz Tomato Paste
1/2 c Water
2 tbsp Butter
1/4 c Monterey Jack Cheese
1/2 c Mozzarella Cheese
Salt & Pepper, to taste
Preheat oven to 450 degrees F. Halve, peel and cut onion into 1/2 inch thick wedges. Slice top off of green pepper, remove core, then cut crosswise into 1/2 inch thick rings.
Toss onion and green pepper on a lightly oiled baking sheet. Season with salt and pepper. Add sausage to same sheet. Roast flipping halfway through, until veggies are tender and sausage is cooked through, 15-17 minutes.
Meanwhile, in a medium microwave safe bowl, combine 1/2 c water and 2 tbsp butter. Microwave until water is hot and butter has melted, 1 minute. Whisk in tomato paste until smooth. Season with salt and pepper.
Once roasted, remove veggies and sausage from baking sheet. Carefully place flatbreads on same sheet. Toast until golden, 3-4 minutes.
Once flatbreads are toasted, remove sheet from oven and heat broiler to high. Evenly spread flatbreads with sauce, then top with mozzarella, Monterey Jack, sausage and veggies. Season with salt and pepper. Broil until cheese melts and flatbreads are gold brown, 3-5 minutes.
Allow flatbreads to cool slightly, then slice into pieces. Divide between plates and serve.
