Who is ready for a reset? I know I am. Ever since we got back from Florida late last Wednesday, I haven’t been able to keep my days straight. And since we have gotten back, we have also had our upstairs air conditioner stop working. Always something, am I right?! So here’s to a new week! Looks like it’s going to be rainy here most of the week but I’m not mad about it. I enjoy the occasional rainy days to stay in, read books, craft, watch a movie with my girls and get some things done around the house.
This week, I’m mixing things up and sharing an appetizer, dinner and dessert. We have been so busy lately, I can’t remember the last time we actually grilled out. Our favorite dinner to make on the grill is jalapeno poppers and burgers or steak so I’m sharing an indoor spin on these things today!
Jalapeno Popper Dip
8 oz cream cheese
1 c sour cream
2 c shredded cheddar cheese
3/4 c parmesan cheese
4 oz chopped jalapeno
8 slices of bacon, cooked & chopped
Preheat oven to 350F. Mix together first 5 ingredients and spoon into an 8×8 baking dish. Bake for 15 minutes. Top with bacon crumbles and serve with tortilla chips.
Cheeseburger Stuffed Portobello Mushrooms
1 lb ground beef (or turkey)
1/2 onion, chopped
Favorite burger or steak seasoning
3 wedges of Laughing Cow cheese
2 tbsp ketchup
2 tbsp mustard
4 portobello mushrooms
Shredded cheese, lettuce and tomato for topping, optional
Preheat oven to 350F. Add onions to a pan on medium high heat. Saute for several minutes and add ground beef. Cook until meat is browned, drain fat and season with your favorite burger or steak seasoning. Add Laughing Cow cheese and mix until combined. Then stir in the ketchup and mustard. Stuff mixture into portobellos and place on a baking sheet. Bake for 20 minutes. Top with additional cheese, lettuce and tomato if desired. Enjoy!
White Chocolate Macadamia Nut Cookies
1 c butter, softened slightly
2 c sugar
1 c brown sugar
2 large eggs
2 tsp vanilla
3 c flour
1 tsp baking soda
1/4 tsp baking powder
1/4 tsp salt (if using unsalted butter, use 3/4 tsp salt)
1 1/2 c white chocolate chips
1 c macadamia nuts, roughly chopped
Preheat oven to 375F. In a large mixing bowl, beat butter, sugar and brown sugar for at least 4 minutes or until light and fluffy. Add eggs one at a time, mixing well after each addition. Add vanilla. Stir in flour, baking soda, baking powder and salt. Mix just until combined. Stir in white chocolate chips and macadamia nuts. Drop onto parchment paper lined baking sheets. Bake for 9-11 minutes or until the edges start to become a light golden color. Don’t overtake! Let rest for 5 minutes on baking sheet before removing!
